Flush the hanout or the hanout Rass (in Arabic: راس الحانوت) is a popular Moroccan spice blend used in all North Africa. The name means "top of the shop" in Arabic and refers to a mixture of the best spices a seller has to offer. There are three types of mixtures of Ras the hanout: Lamrouzia, L'msagna, and Monuza.
There is no combination definitive set of spices that make up Ras the hanout. Each shop, company, or person would have their own secret combination containing over one dozen species. Typically include cardamom, clove, cinnamon, ground chiles, cilantro, cumin, nutmeg, pepper and turmeric.
Some recipes include over one hundred ingredients, some rarely found in Western food, as ash berries, chufa, grains of paradise, root of pepper from the monk, cubeba or dried Rosebud, Lily. In general, all ingredients are toasted and then ground together. Individual recipes are often improvised.
